I have this love, hate relationship with healthy meal prep. 76.5 % of the time I am like who really has time to do all of that on a Sunday when you are out living a happy active lifestyle. The truth is that no matter how time-consuming meal prepping can be, even I can’t deny that when it’s done correctly it can make your fitness and weightloss journey a bit easier.
But back to the part about no one having time for that….
I truly struggle with making time for healthy meal prep. Now, I know we all have the same amount of time in a day, and I can make time for what’s important, and I should learn how to be more productive and blah blah blah UGH…. I still don’t have time. so what’s a girl to do?
There are two things I always have stocked JUST IN CASE I haven’t planned a meal or forgot to meal prep. These two ingredients are always in my refrigerator no matter what. It’s perfect for when the hubby is hungry and I hadn’t cooked. I also like it because I can use these ingredients to make a variety of quick dishes in less than 5 minutes most of the time
The Two Ingredients that I always have in my refrigerator in case I forget to meal prep are…
- Diced (or sliced, or chopped) Mixed Vegetable (usually frozen)
- Baked Chicken (usually chicken legs because they are the cheapest)
In my home, we call it the “refrigerator meal” because it is always there and ready to eat. The baked chicken recipe that I make is so flavorful and easy to make. I usually have to stop myself from eating the entire pan when it’s done. It falls right off the bones.
The vegetables are also full of flavor and are so yummy that they too can be eaten by themselves. I usually chop up the veggies and freeze half of them uncooked for use in any recipe or I quickly saute the other half and place it in the refrigerator to eat along side my baked chicken. I am sure everyone already has rice or tortillas at the house. You can quickly make a rice bowl with these ingredients. I like to cook my chicken in the slow cooker all day (because, like I said before, I don’t have a lot of time). I season it with Garlic Powder, Black pepper, salt and any herbs that I have home. It cooks all day while I am cleaning or out with my family on a Sunday and when I get home the “refrigerator meal” for the week is done. Hubby loves that he can just grab a piece when he is hungry. It also stops him from stopping at a fast food because he knows it’s always there.
Below I will list a few other meals that you can quickly whip up with these ingredients and a few other things that you should already have in your stocked pantry.
- Rice/veggie bowls,
- chicken salad sandwiches
- Lettuce Wraps
